I have spent over 20 years leading and cooking in some great kitchens throughout the Chicagoland are. Let me name drop a little: Birchwood Kitchen (RIP), Lula Cafe, Kaufman's Delicatessen, Pastoral, and Floriole to name a few! People often ask if this is a Covid business, and I suppose it sort of is. I left Kaufman's at the end 2019 to have a baby and low and behold when I went to start a new job Covid happened. Long story short, I realized if there was any time to create my own path, this was it, and here I am! Plus I was craving comfort and happiness and for me that is best expressed through cooking.
