Behind the Schmaltz & Vinegar

I have spent over 20 years leading and cooking in some great kitchens throughout the Chicagoland are. Let me name drop a little: Birchwood Kitchen (RIP), Lula Cafe, Kaufman's Delicatessen, Pastoral, and Floriole to name a few! People often ask if this is a Covid business, and I suppose it sort of is. I left Kaufman's at the end 2019 to have a baby and low and behold when I went to start a new job Covid happened. Long story short, I realized if there was any time to create my own path, this was it, and here I am! Plus I was craving comfort and happiness and for me that is best expressed through cooking. When you experience Schmaltz & Vinegar, I hope you can feel the love and community I wish to share through comforting food and warm and inviting service. .Now, 3 random facts about me, just for fun:
  1. I prefer to eat my Cheetos stale
  2. My grandmother was a terrible cook (except for a very limited amount of things) so no, my Jewish specialties are not based on her, but rather on the idea of what I wish she made.
  3. Yes, that is a corned beef sandwich tattoo on my arm. Rye, with yellow mustard.
