Check out the quick & easy Israeli cheesecake recipe:

Ingredients:

Cake crust:

250 grams petite beurre cookies 

75 grams melted butter ( unsalted)

Lemon zest from one lemon finely grated 

1/4 cup of white granulated sugar

Cheese filling:

500 grams of “ Gvina Levana” – Israeli quark cheese 5% or 9% fat

1/3 cup of milk

1 package of Osem Israeli vanilla instant pudding powder 

250 ml heavy cream 

1/2 cup of white sugar

9/10 inch Round cake pan ( the kind where the bottom pulls out) 


Instructions:

In a food processor ( or in a ziplock bag and a Schnitzel pounder) grind the petit beurre to very small crumbs, sand like consistency.

Mix with the rest of crust ingredients and spread in a uniform tight layer in your cake pan and let it rest in fridge 

Make the cheese filling:

In a big bowl mix the cheese, milk and instant pudding 

In a separate bowl whip the cream and the sugar into a steady whipped cream 

Gently fold the whipped cream into the cheese mixture until combined 

Spread it on the petit beurre crust and let it rest in the fridge overnight 

Before serving decorate with seasonal fresh fruit. Fruit that goes well on top are strawberries, raspberries, blueberries, or any fruit you like!
